easy pesto


Servings: 16

Ingredients

  • 3 cups fresh basil leaves
  • 1 1/2 cups chopped walnuts
  • 4 cloves garlic, peeled
  • 1/4 cup grated Parmesan cheese
  • 1 cup olive oil
  • salt and pepper to taste

Directions

  1. In a food processor, blend together basil leaves, nuts, garlic, and cheese. Pour in oil slowly while still mixing. Stir in salt and pepper.

  1. I've never seen a pesto recipe with walnuts. It always seems to be pine nuts (and who ever has those?). I'll be anxious to try my Pesto Chicken Sandwich with this! . . . by the way, are your sweet basil plants taking over the world in your planter box?

  2. I was thinking the same thing as Mom- good idea with the walnuts! Pine nuts are expensive. I wish I had enough basil to try this right now.

  5. i put this on a chicken sandwich when i made it, with some tomato and lettuce :)
    i suppose you can try and skip the nuts, but you will want to blend some nuts in otherwise the texture will be weird
